Got Mushy Lentils? Make Lentil Cakes!

Remember those mushy lentils I mentioned in my previous post? Well look at them now – new and improved!

I took the leftover lentils from the previous meal and made lentil cakes/fritters/whatever you want to call them by adding an egg and maybe a cup of flour to about 4 or so cups of the lentil “puree.” I didn’t really know what I was doing at the time and therefore don’t have any exact measurements. I started by adding an egg and then adding some flour until I thought it looked like a good consistency. In the end, I think it was about the consistency of a thick pancake batter…that or maybe something similar to Gak (you know you remember Gak). I also added a little more cayenne pepper and some cumin to the batter. Next is to fry them off in a little vegetable oil to get a delicious crisp on the outside. Then I ate them with a dollop of sour cream on top.



Food for Thought:
I imagine one could take this process and make their own veggie burgers.

    I tried this after ruining a pan of lentils. It was yummy! I used garlic and paprika as it’s all I had and served with some left over salsa and sour cream. Really nice!

    I just tried making lentils in a rice cooker to see if would work….nope-mush. So came here to find s way to save them. Will try. Tks

    I’m SO incredibly excited about all the failures listed here BECAUSE I don’t like lentils cooked just until firm as, it seems, the entire world prefers. So I’m going to get right at that rice cooker and “have me a time!” Thank you SO much for the advise!

    So happy that your recipe is here. I ended up freezing the mushy lentils, not knowing what to do with them but hating to throw it out. I’m fixing this for dinner using some walnut flour and chickpea flour (don’t have any regular flour and we’re in an ice storm!) I may also try to craft some veggie burgers with the rest of the lentils, maybe mixing with some cooked brown rice to help them hold together

    I overcooked lentils today so I made a lentil hummus. Lentils, olive oil, lemon juice, garlic, red pepper flakes and shredded Parmesan cheese. It was delicious!
