Bacon Avocado Egg Toast

bae: 1. Slang for “babe” or “baby.” 2. An acronym for “before anyone else.” 3. The sound made by sheep. 4. Bacon, avocado, and egg—perhaps one of the greatest combinations in the world.

“Bae” is a term that has entered the American lexicon similar to “selfie” or “twerk.” It has even spurred articles written in national publications like TIME and The Atlantic (in addition to a number of entries on Urban Dictionary). The lesser known definition of bae (that I may have just made up) is as an acronym for the beloved combination of bacon, avocado, and egg. In keeping with the artisanal toast trend—albeit a bit behind the curve—I now present to you the bae toast.

BAE Toast

You probably don’t need to read much more past the title to figure out how to make this tasty concoction, but that’s no fun! Top whole wheat toast with slices of ripe avocado. (I don’t own a toaster, so instead I just use my oven to toast the bread by placing slices directly on the rack.

Avocado on Toast

Smash the avocado onto the toast and sprinkle with salt and pepper.

Cook 3 slices of bacon in a nonstick skillet until crisp. Reserve the bacon fat in the pan.

Bacon Avocado Toast

Cook a sunny-side up egg in the reserved bacon fat and place on top of the toast. Season with salt and pepper and add a few shakes of hot sauce.
