Chorizo-Stuffed Sweet Potatoes Recipe

I love using chorizo in recipes because it’s such a flavor bomb. In this instance, all of the great spices found in chorizo sausage get mixed with bell peppers and onions. This mixtures then becomes the perfect filling to complement baked sweet potatoes. I sprinkle it with cotija cheese, which is sort of like a Mexican Parmesan, and fresh cilantro. The combo off all of these ingredients in this dish hits on a lot of the flavors that I love: sweet, spicy, salty, cheesy, and more!
