It may feel like summer is coming to an end, but we still have a whole month left! That means there’s still time for plenty of sunshine, days spent soaking up the rays, and nights filled with revelry, making the most of what the season has to offer.

That also means there’s still plenty of time to enjoy your favorite summer produce, such as beautifully flavorful tomatoes. Yes, tomatoes are available at the grocery store year round, but there’s just no comparison between those things and the fruit that’s available now.

Do you find yourself with a bunch of questions about tomatoes that you’re too afraid to ask someone? Well have no fear! I wrote this handy-dandy guide at my day job with everything you need to know about tomatoes.

Heirloom Tomato Ricotta Tart Recipe

Now, to this recipe: I like to think of it as a fancy pizza. The crust is layers of phyllo dough, butter, and Parmesan cheese that gets nice and crispy in the oven. Next goes a mixture of ricotta cheese and herbs—I chose thyme, but you could really use whatever you have on hand that would go well with the tomatoes. Last, and certainly not least, comes the star of the show. I picked a nice variety of heirloom tomatoes, but feel free to substitute any type of slicing tomato you have access to, such as a good beefsteak.
