S’mores Ice Cream Pie

A few weeks ago I was doing some outside recipe testing for a frozen s’more and absolutely fell in love with mixing toasted marshmallows into ice cream. It changed my life, and now I want to change yours. This recipe has only 5 ingredients, only needs you to turn on your oven for a few minutes, and is simply delicious. This is the perfect frozen dessert for the middle of the summer (or any other season). If you do make this recipe on a warm day, be sure to not let your ice cream get too soft/melt or else you might end up with ice crystals when it re-freezes.

S'mores Ice Cream Pie

Ingredients:

  • Nonstick cooking spray
  • One 10.5-ounce bag mini marshmallows
  • 1 quart (4 cups) vanilla ice cream, slightly softened
  • One 9-inch graham crack pie crust
  • 1 cup semisweet chocolate chips

Toasted Marshmallows

Procedure:

  1. Preheat the broiler on your oven.
  2. Coat a rimmed baking sheet EXTREMELY well with nonstick cooking spray. Put another way—spray the F out of the baking sheet to keep things from sticking. Spread the marshmallows out on the prepared sheet in an even layer. Place under the broiler until evenly toasted, rotating the pan as needed. Let cool for 5 to 10 minutes.
  3. Spray your cutting board and knife with cooking spray to keep things from sticking. Scrape up the toasted marshmallows, roughly chop with the prepared utensils, and mix into the slightly softened ice cream. Scoop the marshmallow ice cream into the graham cracker crust, cover, and freeze until firm, about 1 hour.
  4. Melt 1/2 cup chocolate chips in the microwave at 20 second intervals. Spread onto the ice cream pie and sprinkle the remaining chocolate chips on top. Place back in the freezer until set.

One slight issue with pouring the melted chocolate on the ice cream—as you might be able to guess—is that it causes the ice cream to melt. An alternative (that also happens to be much simpler) is to sprinkle all of the chocolate chips over the ice cream after it has been first put into the pie shell.

And yes, there is an extra slice missing from the picture above. I got hungry late last night and needed a snack. It was worth it.
