As I think I’ve mentioned before, my feelings towards non-scrambled eggs have begun to grow fonder. This meal is one piece of evidence towards this fact. The thought of a nice runny yolk mixing with the beans warms my stomach even as I write this.
Ingredients:
- makeshift chili
- kidney beans
- diced red bell peppers
- diced hot dogs (What can I say… they’re quick to defrost and add to a dish. Plus, it’s hard for me to have a meal without meat.)
- chili powder
- red pepper flakes
- salt
- pepper
- garlic powder
- hungarian paprika
- 2 flour tortillas
- a few tbsp of butter
- 1 egg
- salt and pepper
- cheese or sour cream (optional)
Fry the tortillas in butter and set aside on paper towels to drain. Next, prepare/warm up your beans (a can of black beans would also work well here). Cook one egg sunny side up and season with salt and pepper. Layer the tortillas and beans on top of each other and top with your egg.
